Recipe Makes 24 servings.
Ingredients:
6 6-inch corn tortillas
½ diced green pepper
½ diced red pepper
1 diced tomato
8 ounces green chilis
3 sliced scallions
¼ cup diced cilantro
1 ¾ cup nacho-style non-dairy cheese (recipe found here)
Directions:
- Begin by pre heating your oven to 400 degrees Fahrenheit.
- Next, place each of the tortillas in one layer on two baking sheets. Place the ingredients overtop the corn tortillas, placing the non-dairy cheese overtop last.
- Bake the tortillas for ten minutes. The cheese should begin to bubble. Slice the tortillas into four pieces, and serve them warm before a party. Enjoy!
